Eight years ago I opened, almost for fun, a recipe blog, in which I wanted to transfer my philosophy to the kitchen, that is, very high attention to waste.

In my opinion, food must be respected, and it must always be, both when it is beautifully fresh, freshly prepared, and when, through our fault, it has become a leftover, or we classify it as waste.

This is why my recipes are almost always proposed to recover both leftovers and waste, often making them become dignified protagonists of new preparations.

And when I don't recover food, I advise how to recover time, another precious ingredient of our times

HOW IMPORTANT DO YOU THINK IT IS TO UNDERSTAND A PEOPLE THROUGH THEIR CUISINE?

In my opinion, gastronomic culture is fundamental in the history of peoples. There is no need to start from far away, just look at our regional specialties, and it immediately becomes clear how gastronomic tradition is linked to the territory, to local availability, to traditions.

Until not long ago, exchanges from country to country were not as easy and fast as they are today, everyone had to "make do" with what the territory, position and climate allowed them.

And finally, tasting local specialties, both Italian and foreign, is essential to then be able to say "I was there".

OUTSIDE THE KITCHEN, WHAT DO YOU DO TO MAKE YOUR LIFE GREENER?

I think, or rather, I see examples around me: those who pay attention to the environment perhaps develop it in one direction (like me for food), but then orient all their behavior in a sustainable way. I don't waste food, but I don't waste water, energy or resources either. I carefully separate waste collection.

I practically always use public transport, the bicycle or what I prefer: my legs. Finally, beyond the number of followers of the blog (www.primononsprecare.it) or the sales of my book (Il Gusto di Non Waste, on Amazon), I try to spread the culture of non-waste as much as I can.
