So with celiac disease (arrived when I was already going to university), I experimented with my old family recipes in a gluten-free version. The first results were not satisfactory. But without losing hope I continued.

My blog Celiac with taste was created precisely to talk about my positivity to celiac disease. Today, After 15 years, I can say that celiac disease has opened up a world to me. A world previously unknown to me. He introduced me to many people, new friends, new realities and above all new flavours.
To a newly diagnosed person I would say to find out, without a doubt, and not to close yourself in a soap bubble. Fortunately, today there are many gluten-free products on the market and there is a lot of information about them. You don't have to feel excluded or experience it in a negative way. I have always thought that celiac disease makes us somehow "special" from the crowd!

LET'S TALK ABOUT TRAVEL AND CELIAC DISEASE, HOW MANY DIFFICULTIES DO YOU FIND AND HOW MUCH THIS LIMITS YOU IN YOUR TRAVELS?
Many think that it is impossible to combine the two: travel and celiac disease. But I don't agree. Indeed travel, it becomes more interesting, precisely in search of delicacies never tasted, new flavours. And then you know, Traveling broadens horizons and makes us better. You will be amazed to find so many gluten-free options around the world.
In Italy we have a use/abuse of products such as bread and pasta. In the rest of the world, I discovered, who use alternative flours a lot, gluten-free, eat more, rice, teff. And many main dishes do not include the use of flour. But they are “naturally” gluten-free. Also thanks to the communities, have forum, On the various blogs you can find lots of news on the subject and how to proceed. And it is precisely this reason that led me to write about my travels, a sort of guide on places to eat.
One piece of advice I can give to my celiac friends is to never stop traveling or discovering the world because of celiac disease..

What do you do to make your life more ecological?
I think very little is enough, small gestures that each of us should do in our daily lives to make our lives more ecological, respecting the planet. Io, In my own small way I try to do waste separation well, use of energy saving light bulbs, I unplug all devices I don't use, I try to use the car as little as possible and prefer public transport or a nice walk.
I just have a little problem: I don't know how to ride a bicycle! But I'll try to fix it... I also try to surround myself with plants that purify the air in the house and absorb harmful gases. I use shopping bags instead of plastic bags, reusable water bottles always with me.
Even when traveling I prefer to eat local, Furthermore, it is also a good way to taste typical local foods, buy in craft shops, and above all, walk a lot, the best way to get to know a place.
